Ingredients:
- 2 cups grated white pumpkin (ash gourd)
- 1 cup sugar
- 1/2 cup ghee (clarified butter)
- 1/2 cup milk
- 1/4 cup cashews, chopped
- 1/4 cup raisins
- 1/2 teaspoon cardamom powder
- A pinch of saffron strands (optional)
Instructions:
1. Heat a tablespoon of ghee in a pan and add the grated white pumpkin. Cook on medium heat until the pumpkin turns soft and the moisture evaporates. Stir occasionally to prevent sticking.
2. In a separate pan, heat the remaining ghee and roast the cashews until they turn golden brown. Remove the cashews from the pan and set them aside. In the same pan, add the raisins and sauté until they plump up. Remove the raisins from the pan and set them aside.
